Crispy Cajun Chicken

Enjoy this flavorful dish which is both scrumptious and good for you. Makes 4 servings at 295 calories per serving with a mere 4 grams of fat.

4 items Skinless chicken breasts, with bones, 6 ounces each, without bones, 3 ounces each
1/4 cup Non-fat buttermilk or yogurt
5 cup Corn flakes
1 Tbsp Ground paprika
2 tsp Cajun seasoning

Marinate chicken for at least 3 hours before you plan to eat. Rinse the chicken and pat it dry with paper towels. Place the chicken into an appropriately sized marinade bag (zip lock type bag) and pour the buttermilk (or yogurt) over the chicken. Gently remove excess air from bag and seal. Place marinade bag in a bowl and refrigerate for several hours or overnight.

Preheat oven to 400F. Crush corn flakes into fine crumbs. You should end up with about 1 1/4 cups of crumbs. Combine the crumbs with paprika and Cajun seasoning in a small plastic bag. Close the bag and shake well to mix. Remove 2 pieces of chicken from the marinate bag and place in the coating and shake to coat evenly.  Repeat with remaining chicken. Coat a large baking sheet with non-stick cooking spray and arrange the chicken on the pan. Lightly spray each piece of chicken with non-stick spray and bake at 400F for 50 minutes or unil the meat is tender and juices run clear when the chicken is pierced.
